Cheesy Chicken and Rice Casserole

This casserole is a classic comfort food that everyone will love. It's made with tender chicken, creamy rice, broccoli, cheese, and a crunchy topping. It's easy to make with pantry staples and can be prepared ahead of time. You can also customize it with your favorite vegetables, cheese, or seasonings.

INGREDIENTS

  • 4 cups cooked chicken, shredded or chopped
  • 2 cups white rice, cooked
  • 2 cups broccoli florets, fresh or frozen
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • ¼ cup milk
  • 2 cups shredded cheddar cheese, divided
  • ¼ teaspoon garlic powder
  • Salt and pepper, to taste
  • ¼ cup butter, melted
  • 1 cup crushed Ritz crackers

PREPARATION

  1. Preheat oven to 350°F. Grease a 9x13 inch baking dish.
  2. In a large bowl, stir together the chicken, rice, broccoli, soup, sour cream, milk, 1 cup of cheese, garlic powder, salt, and pepper. Spoon the mixture into the prepared baking dish and spread evenly.
  3. In a small bowl, toss the butter and crackers together. Sprinkle over the casserole. Top with the remaining 1 cup of cheese.
  4. Bake for 25 to 30 minutes or until bubbly and cheese is melted.
