Cheesy Chicken and Rice Casserole

This casserole is a classic comfort food that everyone will love. It's made with tender chicken, creamy rice, broccoli, cheese, and a crunchy topping. It's easy to make with pantry staples and can be prepared ahead of time. You can also customize it with your favorite vegetables, cheese, or seasonings.
INGREDIENTS
- 4 cups cooked chicken, shredded or chopped
- 2 cups white rice, cooked
- 2 cups broccoli florets, fresh or frozen
- 1 can cream of chicken soup
- 1 cup sour cream
- ¼ cup milk
- 2 cups shredded cheddar cheese, divided
- ¼ teaspoon garlic powder
- Salt and pepper, to taste
- ¼ cup butter, melted
- 1 cup crushed Ritz crackers
PREPARATION
- Preheat oven to 350°F. Grease a 9x13 inch baking dish.
- In a large bowl, stir together the chicken, rice, broccoli, soup, sour cream, milk, 1 cup of cheese, garlic powder, salt, and pepper. Spoon the mixture into the prepared baking dish and spread evenly.
- In a small bowl, toss the butter and crackers together. Sprinkle over the casserole. Top with the remaining 1 cup of cheese.
- Bake for 25 to 30 minutes or until bubbly and cheese is melted.
