Roasted Vegetable Salad with Quinoa

This salad is a healthy and satisfying meal that is packed with roasted vegetables, quinoa, spinach, and feta cheese. It's tossed with a simple lemon dressing that adds a bright and refreshing flavor. You can use any vegetables you like, such as carrots, zucchini, eggplant, or mushrooms. This salad is great for lunch or dinner, and can be served warm or cold.

INGREDIENTS

  • 4 cups chopped mixed vegetables
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 cups cooked quinoa
  • 4 cups baby spinach
  • ¼ cup crumbled feta cheese

FOR THE DRESSING

  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon dried oregano

PREPARATION

  1. Preheat oven to 425°F. Line a baking sheet with parchment paper.
  2. In a large bowl, toss the vegetables with olive oil, salt, and pepper. Spread them in an even layer on the prepared baking sheet. Roast for 25 to 30 minutes, stirring once, until tender and browned.
  3. In a small bowl, whisk together the dressing ingredients until well combined.
  4. In a large salad bowl, toss the quinoa, spinach, and feta cheese with the dressing. Add the roasted vegetables and toss gently to combine.
