Greek Salad with Chicken

This quick and easy salad is a great way to use up leftover cooked chicken. It's loaded with crisp lettuce, tomatoes, cucumbers, olives, feta cheese, and a tangy lemon dressing. It's a satisfying and healthy meal that you can whip up in no time.
INGREDIENTS
FOR THE SALAD
- 4 cups chopped romaine lettuce
- 2 cups chopped cooked chicken
- 2 cups cherry tomatoes, halved
- 1 cucumber, peeled and diced
- ¼ cup sliced black olives
- ¼ cup crumbled feta cheese
FOR THE DRESSING
- ¼ cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 clove garlic, minced
PREPARATION
- In a large bowl, toss the lettuce, chicken, tomatoes, cucumber, olives, and feta cheese together.
- In a small bowl, whisk the olive oil, lemon juice, oregano, salt, pepper, and garlic together.
- Drizzle the dressing over the salad and toss to coat.
