Greek Salad with Chicken

This quick and easy salad is a great way to use up leftover cooked chicken. It's loaded with crisp lettuce, tomatoes, cucumbers, olives, feta cheese, and a tangy lemon dressing. It's a satisfying and healthy meal that you can whip up in no time.

INGREDIENTS

FOR THE SALAD

  • 4 cups chopped romaine lettuce
  • 2 cups chopped cooked chicken
  • 2 cups cherry tomatoes, halved
  • 1 cucumber, peeled and diced
  • ¼ cup sliced black olives
  • ¼ cup crumbled feta cheese

FOR THE DRESSING

  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 clove garlic, minced

PREPARATION

  1. In a large bowl, toss the lettuce, chicken, tomatoes, cucumber, olives, and feta cheese together.
  2. In a small bowl, whisk the olive oil, lemon juice, oregano, salt, pepper, and garlic together.
  3. Drizzle the dressing over the salad and toss to coat.
